Hey Y'all

Welcome to our little southern Alabama trailer park where most of us are friendly and everyone loves some good cookin'.

On this Blog I hope to share with everyone our passion for food! Just because we live in trailers doesn't mean that we can't have a taste for flavors, from strong southern soul to culinary delights from around the world!

Honestly, I am no chef. I have only really found my love for cooking and trying recipes from around the world for about 2 years. It all began when I had the pleasure of going on a family trip to Scotland and got to enjoy foods that I had never eaten.

When I came home I missed the food so much, I just had to try making it myself.

Let's get real for a minute....the first month of trying to cook more than something out of a box or can....DISASTROUS! Might of even almost burnt down the little trailer, but I just couldn't quit. I got a little better and a little better as time went on. Now I still have failures, but hey you live and learn. Sometimes my recipes are AMAZING, sometimes they aren't, and sometimes people just stare and say "what is that?" but I just keep cooking!

Since I have almost driven my friends and family crazy with all my Facebook food post, I decided I would start this blog and share my love of food with the world, or anyone that might just want to join me. I will be posting recipes, pictures, videos, tips that I am learning, and much, much more. I hope you will come along for the ride and maybe you will find something you would like to try out for yourself.

Veggies: Roasted Corn on the Cob

Summer could not be Summer without some tasty corn on the cob! Ohhhhh the buttery goodness! I have a simple recipe that I absolutely love. It can be done on the grill or in the oven. The corn is so tender and yummy that you will want to share it with all your friends and family.

You are going to need just a few ingredients:

First: CORN!  You really want to find sweet yellow corn. You are going to need to find it with the shucks on, those are going to come in handy at the end. The husk are the secret, no more dry corn on the cob!

Mains: Rack of Lamb

You know I promised sensational foods from around the world and this is one of my favorites. Lamb! Lamb can be a touch pricey, but splurging every once in a while is good for the soul. Try this and you may change some of your steak nights to lamb nights!

Everyone around here that hasn't had it before always says, "what does it taste like?" I really can't answer that other than it's different from beef. The taste is unique. I can say it is tender and I mean tender. Coming from Alabama we are all about some good beef and amazing deer, but my family now loves the lamb!

You can buy all different cuts of lamb, shout out to Publix, that's where I have found it locally. You can get a shoulder, individual lamb chops, but I prefer the rack of lamb. A rack of lamb is just the chops that haven't been cut apart.

My rack of lamb is not your traditional European Lamb because I just don't like Rosemary. You may love that herb and if you do put it in your recipe.

Veggies: Fried Okra

If you are from the south, you know what this is!

If not that's OK, let me introduce you to the amazing veggie called Okra. You can do lots of things with this extremely versatile vegetable. You can stew it down, you can pickle it, or you can have it my favorite way...fried!

There is a trick to frying okra that I discovered after many years of practice. That one secret ingredient that keeps that beautiful cornmeal on and not all in your hot grease: Buttermilk!

Mains: Shrimp and Grits

Who doesn't love an amazing main course? These are some delectable mains from all around the world!

The first main I want to share with you is one of my favorites. I have had this dish in many restaurants and thought it would forever be just a restaurant dish for me. I never would've ever attempted this years ago, but after all the other stuff I have tried to cook I decided to give it a go. I thought it would be really complicated, but it wasn't and the flavors were amazing! It was well worth the effort, it takes a little time and there are a few steps.  Even if you think you can't I promise you can...

Not Your Ordinary Shrimp and Grits

First things first, this ain't your ordinary shrimp and grits. What makes it spectacular is that the grits are fried! Yep lived in Alabama all my life and never heard of fried grits. I will honestly say even if I am just cooking a little breakfast for the weekend, after having this, I much rather have my cheese grits fried. It gives a whole new texture and taste to the common bowl of grits.
